Lunch is the toughest meal around my house. Unlike dinners I don’t plan the lunches for the week so I never know what to make! Also my daughter wakes up at different times each day so it can be tough to make a complex meal. Today we were both hungry early so I whipped up something special out of leftover ingredients. It was delish and she at a ton of it!!
2 small potatoes, diced
1 small head of broccoli cut into florets
1 Tbsp olive oil
salt and pepper to taste
1/4 cup sour cream
1/2 cup milk
1/4 cup parmesan cheese
Heat oil in skillet and add potatoes. Cook with lid on and stir frequently to brown. When they are starting to brown add the broccoli for another 10 minutes. Add a splash of water to speed cooking. Season with salt and pepper. Combine remaining ingredients and whisk together. Pour over the potato/broc mixture. Cook with lid on at a low temperature. Once the egg is cooked I like to finish it in a 375 oven for about 10 minutes. Enjoy!
