Mini Shepherds Pie

I have a 23 month old daughter (I’m not ready to say 2 year old, that’s next month) and have found that if I put a little effort into lunch she will eat it. She is not big on leftovers even if she gobbled it up the night before. After a meatloaf, mashed potato and broccoli dinner you definitely don’t want to waste the leftovers so here is what I came up with!
You can get these cute little glass dishes in sets of 4 for about $5 at Walmart, they are perfect for individual anythings!

    Mini Shepherds Pie

mashed potatoes
egg
meatloaf (or any leftover protein)
1/2 cup thawed frozen veggies (or leftover veggies), I used peas and corn
shredded cheese
parmesan cheese

Add the egg to mashed potatoes and stir with a fork or whisk until combined. If it is runny add some dried parmesan cheese (or you can add it just because!) If you have a lot of potatoes pour some in the bottom of an oven safe dish and bake on 350 for about 10 minutes. You just want it to be a little firm. Crumble the meatloaf and combine with the veggies. Add a little shredded cheese. Remove potatoes from the oven and add meat mixture. Top with any remaining potatoes and bake on 350 for about 30 minutes.
